Fresh berries and quinoa dish


serves 2

1 cup Sun Belle strawberries, halved
1 cup Sun Belle blueberries
1 cup cup Sun Belle raspberries
1 teaspoon of sugar
2 cups uncooked rinsed quinoa
1 teaspoon cinnamon
Dash of salt
1 cup of unsweetened or sweetened Almond milk
1/4 cup water


1. In a nonstick pot, combine quinoa, sugar, cinnamon and salt. Add Almond milk and 1/4 cup water.

2. Bring mixture to a boil and then reduce to a simmer on low heat. Continue cooking until most of the liquid has been absorbed and the quinoa is fully cooked, 12 minutes.

3. Remove from heat and mix the fresh berries into the pot and serve in small bowls.
