Modern Cucumber Raitas
Raita is a cooling Indian salad or condiment served with spicy dishes. Our recipe fits this niche. But raita is a lot more, a very versatile low fat healthy treat used to dress up green salads, to spread on a sandwich or wrap, to accompany fish or to serve as a dip. The key variable in raita is how to handle the cucumber - serving it peeled or partially peeled, grating it fine for a smooth consistency or sliced thinly to maintain a little crunch and meatiness.
1 seedless cucumber
1-1/2 cups Greek style yogurt
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 cup fresh chopped mint or cilantro (optional)
Instructions1. Peel cucumber and slice very thinly into a bowl.
2. Stir in all the remaining ingredients.
